Ingredients:
CAKE:
1 cup quick oatmeal
1 1/2 cups boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 cup oleo (butter or margarine)
2 medium Eggs
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
2 tablespoons soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans
Directions:
1. In a large mixing bowl, add oatmeal and hot water. Stir until well combined. Place it inside the fridge to cool for a few minutes.
2. In another mixing bowl, add the eggs, oleo, sugars, flour, salt, and baking soda. Whisk until well mixed.
3. Transfer the mixture into the oatmeal and stir until well mixed.
4. Apply cooking spray in a 9×13-inch cake pan.
5. Transfer the batter into the prepared pan and spread it evenly.
6. Prepare the oven and preheat to 350 degrees F or 175 degrees C.
7. Place the batter inside the preheated oven and bake for about 50 minutes.
8. Remove from the oven and allow it to cool for a few minutes at room temperature.
To Make the Frosting:
1. Place a saucepan on the stove, then add the milk, butter, and sugar. Stir until well mixed.
2. Turn the heat to medium and allow the mixture to boil.
3. Remove from the heat, then add the pecans, coconut, and vanilla. Stir until well mixed.
4. Spread the frosting over the cooled cake.
5. Allow it to sit and cool for a few minutes.
6. Serve and enjoy!
