Grandma’s Oatmeal Cake

Prep Time: 10 mins | Cook Time: 40 mins | Yield: one 9×13 inch cake

This recipe has always been a part of my family since I was a kid. My Grandma used to bake this for us. Luckily, she taught me the recipe. Now, I get to share it with you, friends! These ingredients are pretty basic so feel free to add more to it if you wish. Enjoy!

Ingredients:

CAKE:

1 cup quick oatmeal
1 1/2 cup boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 cup oleo (butter or margarine)
2 medium Eggs
1 1/2 cup flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt

FROSTING:

2 tablespoon soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans

Directions:

Step 1: Apply cooking spray in a 9×13-inch cake pan.

Step 2: In a medium mixing bowl, add in boiling water and oatmeal. Stir until well mixed.

Step 3: Place the bowl inside the fridge and allow it to chill.

Step 4: In another mixing bowl, add the eggs, oleo, and sugars. Beat until well mixed.

Step 5: Add in the flour, soda, cinnamon, and salt. Beat until well blended.

Step 6: Transfer the mixture into the prepared cake pan.

Step 7: Place it inside the oven and bake at 350 degrees F or 175 degrees C for 40 to 50 minutes or until done.

Step 8: Remove from the oven and let it sit at room temperature to cool.

To Make the Frosting:

Step 1: Place a saucepan on the stove and add in milk, butter, and sugar. Turn the heat to medium and allow it to boil.

Step 2: Remove from the heat and add in coconut, pecans, and vanilla.

Step 3: Spread the frosting over the warm cake.

Step 4: Serve and enjoy!
