Grandmother’s Old-Fashioned Gingerbread Cake Recipe

by Sheryl February 15, 2021

This recipe has always been a part of my family since I was little. Give it a try and I am sure that you will surely love every bite of this heavenly gingerbread! Have a great day, friends. Enjoy!

Ingredients:

3/4 c (12 tbsp) butter, melted and cooled
3/4 sugar (I like using organic cane sugar)
2 Eggs
3 3/4 c flour (I used a mix of einkorn and organic all-purpose flour, but you can use all all-purpose if you don’t have any einkorn.)
2 1/4 teaspoons baking soda
1 1/2 teaspoons ginger (I like this kind because it’s organic and non-irradiated)
1 1/2 teaspoons cinnamon (I like this kind)
3/4 teaspoon cloves (I like this kind)
1 tsp salt (I like using real salt)
1 1/2 c molasses*
1 1/2 c hot water

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Place the butter inside the microwave and heat until melted completely, then allow it to cool at room temperature.

Step 3: Add the eggs and sugar into the bowl with the melted butter. Beat until well blended.

Step 4: In another mixing bowl, add the baking soda, flour, spices, and salt. Stir until well combined.

Step 5: Mix the molasses and hot water.

Step 6: Transfer the flour mixture and molasses into the egg mixture gradually. Make sure to stir continuously.

Step 7: Apply cooking spray and sprinkle flour in a 9×13-inch baking pan.

Step 8: Transfer the batter into the prepared baking pan.

Step 9: Place it inside the preheated oven and bake for about 50 minutes or until a toothpick comes out clean after inserting it in the middle.

Step 10: Remove from the oven and let it sit at room temperature to cool.

Step 11: Serve and enjoy!
