These Greek Chicken Skewers with Tzatziki are a fresh, very flavorful chicken recipe that you can easily make on your grill or oven. If you are looking for another easy recipe to try, you have to give this recipe a go super soon! The best part is you do not need to marinate for too long. Just a couple of minutes, and you are still guaranteed a delicious, tender Greek chicken.
INGREDIENTS
3 tbsp olive oil
2 pounds boneless, skinless chicken breasts, cut into 1” cubes
2 tbsp plain Greek yogurt
4 garlic cloves, minced
2 tbsp lemon juice
2 tsp dried oregano
Wooden skewers, soaked in water for 15 minutes
2 tsp fresh mint, minced
TZATZIKI:
1 tbsp olive oil
1/2 medium seedless cucumber
2 cloves garlic, minced
1/2 c. plain Greek yogurt
1 tbsp lemon juice, plus more to taste
1 tbsp fresh mint, minced
Pitas, for serving
Kosher salt and freshly ground black pepper, to taste
How to make Greek Chicken Skewers (with Tzatziki)
Step 1: Place the 3 tbsp olive oil, 2 tbsp Greek yogurt, 2 tbsp lemon juice, 4 garlic cloves, dried oregano, and 2 tsp mint in a large bowl. Mix well and season with salt and pepper. Then, add the chicken and toss well. Cover the bowl and place in the fridge for at least 30 minutes to marinate the chicken.
Step 2: For the tzatziki sauce, peel and grate the cucumber. Using a clean kitchen towel or paper towel, squeeze out the excess liquid. In a medium bowl, place the cucumber. Then, add the yogurt, garlic, lemon juice, olive oil, and mint, and season with salt and pepper. If needed, add extra lemon juice. Cover and place in the fridge for at least 20 minutes.
Step 3: Preheat the grill to medium heat once ready to cook.
Step 4: On the skewers, place the chicken, leaving about 1 inch of space on the ends of the skewers.
Step 5: On the grill over direct heat, place the chicken and cook for about 8 minutes. Flip and continue to cook for another 8 to 10 minutes until the chicken is cooked through and browned.
Step 6: If desired, serve the chicken with tzatziki sauce and pitas. Enjoy!
Tips:
You can cook the chicken in the oven. On a foil-lined baking sheet, arrange the skewers. Broil the chicken for about 7 to 8 minutes on each side until completely cooked.
