Ingredients:
1 red pepper cut into 2-inch pieces
1 yellow pepper cut into 2-inch pieces
1 red onion cut into eighths
2 c cherry tomatoes
1/2 c artichoke hearts
1 lemon
2 large chicken breasts, cut in half or 4 chicken thighs
2 cloves garlic crushed
1/4 c olive oil
1 1/2 tablespoons balsamic vinegar
1/2 teaspoon smoked paprika
1 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons chopped fresh basil
2/3 c kalamata olives
1/4 c chopped feta (omit for Paleo/Whole30)
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Add the red onion slices, chopped peppers, lemon wedges, tomatoes, and artichoke into a large baking sheet.
3. In a mixing bowl, add olive oil, vinegar, garlic, oregano, and paprika. Stir until well mixed.
4. Drizzle about 1/3 of the sauce on top of the mixed veggies, then season with salt and pepper. Toss everything until well combined.
5. Arrange the chicken breasts over the veggies.
6. Place them inside the preheated oven and bake for about 25 minutes.
7. Remove from the oven and add feta cheese, olives, and basil over the chicken breasts.
8. Spread the rest of the sauce on top.
9. Put them back inside the oven and bake for 10 more minutes or until done.
10. Garnish with freshly chopped basil.
11. Serve and enjoy!
