Ingredients:
1 lb sirloin or round steak sliced thin against the grain
¼ c soy sauce divided
1 tbsp granulated sugar
2 tbsp cornstarch
1 c low-sodium beef broth
4 tbsp vegetable oil divided
2 large bell peppers cubed (red, green, or both)
1 large onion sliced into wedges
1 tsp fresh ground black pepper
3 cloves garlic minced
1 tbsp fresh ginger minced or grated
¼ tsp crushed red pepper flakes (optional)
2 large tomatoes cubed (or several small)
Cooked rice for serving
Soy sauce for serving
Directions:
1. In a small cup, add sugar and soy sauce. Stir until well blended.
2. Spread the mixture over the steak and let it marinate for about half an hour to 4 hours.
3. Mix beef broth, cornstarch, and 2 tbsp of soy sauce in a small mixing bowl. Stir until well combined.
4. Place a large skillet on the stove and turn the heat to medium-high.
5. Add 1 tbsp of oil and allow it to become hot.
6. Add 1/2 of the marinated beef and cook each side until brown.
7. Remove the beef from the skillet onto a clean plate.
8. Repeat the process to the rest of the beef.
9. Add the remaining oil and allow it to become hot.
10. Add the onions, bell pepper, and black pepper. Sauté until translucent.
11. Turn the heat down to medium, then add the ginger, crushed pepper flakes, and garlic. Sauté until aromatic.
12. Put the beef back to the skillet and stir until well mixed. Simmer for about 5 minutes or until the texture of the sauce becomes thick.
13. Remove from the heat, then sprinkle parsley and black pepper on top.
14. Serve and enjoy!
