This Gumbo recipe is so good! You have got to give it a try, I’m telling you. Enjoy!
Ingredients:
¼ c canola oil
2 pounds chicken skinless chicken thigh
8 ounces smoked sausage
¼ c unsalted butter
½ c flour
1 medium onion diced
2 tsp minced garlic
1 medium green bell pepper diced
1 c chopped celery (about 3 sticks)
½ lb crab legs
1 tbsp Creole seasoning.
1 tbsp chicken bouillon powder or 1 cube
½ tbsp smoked paprika
1 tbsp thyme fresh or dried
2 bay leaves
1 14- ounces can tomatoes (chopped)
6 c chicken stock (sub with water)
1 lb shrimp (peeled and deveined)
1 tbsp gumbo file
2 green onions, chopped
¼ c chopped parsley
Directions:
Step 1: Season with salt and pepper the chicken.
Step 2: Place a Dutch oven on the stove and turn the heat to medium.
Step 3: Add oil and allow it to become hot.
Step 4: Add the chicken and cook each side until brown. Remove the chicken onto a clean plate.
Step 5: In the same pot, add the sausage and cook until brown, then remove.
Step 6: Place a saucepan on the stove and turn the heat to medium.
Step 7: Add butter and allow it to melt.
Step 8: Add oil and flour. Stir until well combined, then cook the mixture for 20 minutes or until it resembles chocolate.
Step 9: Remove the pan from the heat and allow it to cool at room temperature.
Step 10: Put the Dutch oven on the stove, then add green pepper, onion, celery, and garlic. Saute for 8 minutes or until translucent.
Step 11: Add the cooked sausage, chicken, creole seasoning, crab legs, paprika, chicken cubes, thyme, and bay leaves. Stir and cook for 5 minutes.
Step 12: Add 6 cups of chicken stock and a can of tomatoes. Stir until well combined, then allow the mixture to simmer for 50 minutes.
Step 13: Add the shrimp and simmer for 5 more minutes.
Step 14: Add the green onions, chopped parsley, and file powder. Stir until well mixed.
Step 15: Serve and enjoy!
