Ready in just an hour, this Ham Casserole with Broccoli and Rice is a complete meal that you and your loved ones are going to enjoy!
Ingredients:
2 c shredded cheddar cheese, separated
2 c cooked ham, diced
2 c broccoli florets
10.75 ounces cream of chicken soup
¾ c milk
1 ¼ c white long-grain rice, uncooked
½ c yellow onion, finely diced
2 tbsp unsalted butter
2 1/2 c chicken broth, low sodium
½ c sour cream
1 tbsp olive oil
Salt/Pepper, optional
Ritz Cracker Topping
2 tbsp butter, melted
1 c Ritz Crackers, crushed into crumbs
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch casserole dish.
Place a large saucepan on the stove and turn the heat to medium.
Add 2 tbsp of butter and allow it to melt.
Add the onions, then sauté until translucent.
Add the rice, olive oil, and chicken broth. Stir until well blended. Allow the mixture to boil.
Turn the heat down to low, then cover with a lid. Simmer for about 7 minutes.
Add the broccoli, then cover the pan again and cook everything for another 8 minutes.
Remove the pan from the stove, then allow the rice to sit for another 10 minutes.
Add the sour cream, ham slices, 1 cup cheddar cheese, condensed soup, and milk. Stir everything until well blended.
Transfer everything into the prepared casserole dish and spread it evenly.
Sprinkle the rest of the cheddar cheese on top.
Cover the casserole dish with aluminium foil.
Place it in the preheated oven and bake for about 15 minutes.
Meanwhile, add butter and Ritz cracker crumbs into a mixing bowl. Stir until well mixed.
Scatter the mixture over the casserole.
Bake for 10 more minutes or until done.
Remove from the oven and allow the casserole to rest for a few minutes at room temperature.
