Ingredients:
1 tbsp vegetable oil
1 tsp ground ginger
1 tsp onion powder
3-4 lbs. boneless pork loin
1 1/2 tsp kosher salt
20 oz. canned pineapple chunks in 100% juice
1/2 large sweet onion, diced (about ⅔ c)
1 tsp paprika
1/2 c light soy sauce*
1 1/2 tbsp cold water
1 tbsp cornstarch
Directions:
1. Place a large skillet on the stove and turn the heat to medium-high.
2. Add oil and allow it to become hot.
3. In a mixing bowl, add the ginger, paprika, onion powder, and salt. Stir until well mixed.
4. Use paper towels to pat dry the pork loin.
5. Coat the pork loin with mixed seasonings.
6. Add the pork into the hot skillet and sear each side for about 3 minutes or until brown.
7. Thinly slice the onion. Mix the pineapple chunks, juice, and soy sauce.
8. Arrange 1/2 of the pineapple chunks into the slow cooker.
9. Remove the pork from the skillet and place it over the pineapple chunks with the fatty part facing up.
10. Add the onion slices, another half of the pineapple chunks, and soy sauce mixture on top of the pork.
11. Cover the slow cooker and cook everything for about 5 hours on a low setting.
12. Remove the pork and use two forks to shred it into small pieces.
13. Use a sieve to strain the sauce from the slow cooker. Transfer it into a saucepan.
14. Place the pan on the stove and turn the heat to medium-high. Allow it to simmer.
15. Add the slurry and stir until the texture of the sauce becomes thick.
16. Spoon the delicious over the shredded pork.
17. Serve with the pineapple chunks. Enjoy!
