Ingredients:
1/4 c extra virgin olive oil
1/4 tsp ginger
2.5 pounds pork tenderloin (approximately 2 medium pork tenderloins)
1/2 tbsp garlic powder
1/2 tsp onion powder
1 tbsp paprika
1/2 tsp cinnamon
1 c chicken stock
1/2 c Barbecue Sauce of Choice (We like Tessemae’s)
1/2 tsp pepper
Directions:
1. Discard the silver skin off the pork.
2. Add all the spices and olive oil into a large mixing bowl. Stir until well blended.
3. Add the pork tenderloin and toss until well coated.
4. Transfer everything inside a resealable bag. Shake the bag again until well mixed, then marinate overnight.
5. Transfer the pork tenderloin and the marinade into a crockpot.
6. Pour the chicken stock over the pork tenderloin.
7. Cover the crockpot and cook for about 6 to 8 hours on a low setting or 4 to 6 hours on a high setting.
8. Remove the pork tenderloin from the pot and use two forks to pull them apart.
9. Mix with your preferred BBQ sauce.
10. Serve and enjoy!
Notes:
To cook with an Instant Pot:
1. Repeat all the steps but pressure cook for only 18 minutes on a high setting.
2. Do a natural release of the pressure for about 15 minutes.
3. Make sure to use pork tenderloins for the best outcome.
4. I always marinate the pork overnight for more flavour.
