Hearty Vegan Stew

A very healthy stew that you will surely love! Why not enjoy stew the healthy way, right? Feel free to add more ingredients or veggies to this simple recipe. Have a wonderful day, friends. Enjoy!

Ingredients:

1 yellow onion diced
2 carrots sliced into rounds
3 cloves garlic minced
2 pounds jackfruit pieces rinsed well
1 pound gnocchi Italian potato dumplings
1 c fresh tomatoes diced
3/4 c frozen green peas (thawed out and rinsed)
8 sprigs fresh thyme
3 whole cloves
2 bay leaves
1 tablespoon smoked paprika you can sub sweet paprika
1/3 c whole wheat pastry flour
1/3 c fresh Italian parsley roughly chopped
6 c vegetable stock low sodium
1/3 c red wine
sea salt + black pepper to taste

Directions:

Step 1: Prepare a Dutch oven and preheat over medium-low heat.

Step 2: Add in oil and allow it to become hot.

Step 3: Add in the onion and carrot, then sauté until translucent and soft.

Step 4: Add in the garlic and sauté until aromatic.

Step 5: Add in the red wine, jackfruit pieces, bay leaves, and thyme. Stir until well mixed and simmer until the wine has mostly evaporated.

Step 6: In a small mixing bowl, add in the flour and vegetable stock. Whisk until well mixed, then pour in into the pot.

Step 7: Simmer the mixture, and then add in the cloves and paprika.

Step 8: Cook for 45 minutes or until the jackfruit is soft and tender.

Step 9: Add in the gnocchi, green peas, and tomatoes. Cook for a couple of minutes or the peas is cooked to your preference and the gnocchi float.

Step 10: Remove the cloves and thyme. Sprinkle more salt and pepper if needed.

Step 11: Remove from the heat and add in fresh parsley. Stir until well mixed.

Step 12: Serve and enjoy!

Notes:

1. If you do not have gnocchi, you can use 1 pound of diced golden potatoes instead.

2. Leftovers can last up to 4 days in the fridge or 4 months in the freezer.

3. You can also use a slow cooker to cook this dish.
