Ingredients:
2 tbsp extra virgin olive oil to fry
6 lamb chops, rib chops
Salt and pepper to season
For the marinade
4 tablespoons extra virgin olive oil
2 garlic cloves, minced
1 tablespoon dried oregano, Greek oregano preferably
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh rosemary, finely chopped
lemon wedges to serve
½ tablespoon fresh mint, finely chopped
Directions:
1. Rub each rib chop with coarse salt and ground black pepper. Make sure to coat each well.
2. In a mixing bowl, add mint, garlic, olive oil, oregano, rosemary, and thyme. Stir until well mixed.
3. Rub the lamb with the marinade. Make sure to coat each well. Let them marinate for about 20 minutes.
4. Place a large skillet and turn the heat to high.
5. Add olive oil and allow it to become hot.
6. Turn the heat down to medium-high, then add the rib chops. Sear each side for 3 minutes or until they turn brown. Remove from the skillet onto a clean plate.
7. Let the rib chops rest for at least 5 minutes at room temperature.
8. Serve with your preferred side dish. Enjoy!
