Tender, delicious fork-tender carrots clothed in a simple sweet honey garlic butter sauce. It’s a tasty side dish to chicken, ham, and even rib-eye roast. If roasting veggies is your favorite way to cook them, this recipe is a must-try!
Roasted veggies are my favorite! Roasting the veggies not only intensifies the flavor, but for carrots, especially, roasting makes them sweeter. This recipe has been one of my favorites to prepare carrots. It’s simple and quick! Plus, I can throw this together in advance, saving me a huge time, particularly during busy days. Before serving, I pop these roasted carrots in the microwave to reheat or in the oven for 15 minutes at 300 degrees. And these honey garlic roasted carrots can also be kept in the fridge in an airtight container for up to 2 to 3 days.
INGREDIENTS
1/2 c. butter
2 lbs carrots, cut into 3-inch pieces
2 tbsp honey
4 garlic cloves, minced
Fresh parsley
1/2 tsp salt
1/4 tsp fresh ground pepper
HOW TO MAKE HONEY GARLIC ROASTED CARROTS
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Melt the butter in an oven-safe skillet. Once melted, add the honey and garlic. Mix well until blended.
Step 3: Toss in the carrots until coated.
Step 4: Place in the preheated oven and bake for about 25 minutes or until the carrots are tender. To slightly caramelized the carrots, you can broil them for about 3 to 4 minutes (optional).
Step 5: Remove from the oven when done and serve the honey garlic roasted carrots right away garnished with some chopped parsley. Enjoy!
NOTE:
If an oven-safe skillet is not available, you can melt the butter and saute the garlic in a skillet. In a baking dish, place the carrots and pour the garlic butter and honey over them. Toss well until carrots are coated, then bake as directed.
