Delicious chicken marinaded in mustard and honey! Ready to be devoured in just 35 minutes! Serve this with mashed potatoes or rice, and you have yourself a meal to remember!
Ingredients:
2 tablespoons olive oil, divided
1 teaspoon ground mustard seed
1/4 teaspoon cayenne pepper or to taste
1 teaspoon paprika
4 medium boneless, skinless chicken breasts 4 ounces each
1/2 teaspoon kosher salt
1/8 teaspoon ground pepper
Mustard Sauce:
1 teaspoon white vinegar
1 tablespoon whole grain mustard
1 teaspoon sriracha sauce or to taste
2 tablespoons Dijon mustard
1/4 c honey
a small handful of fresh thyme to garnish
3 tablespoons chicken stock
Directions:
1. In a small bowl, add all the spices. Whisk until well blended.
2. Sprinkle the spices over the chicken, then rub each until well coated.
3. In another mixing bowl, add all the ingredients for the mustard sauce. Stir until well blended.
4. Place a non-stick pan on the stove and turn the heat to medium.
5. Add oil and allow it to become hot.
6. Add the chicken, then sear each side for about 2 minutes or until they turn golden brown.
7. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
8. Place the chicken into an oven-proof baking dish and arrange them in a single layer.
9. Add the mustard sauce on top of the chicken and spread it evenly.
10. Place the baking dish in the preheated oven and bake the chicken for about 15 to 25 minutes or until done.
11. Remove from the oven.
12. Serve and enjoy!
Notes:
Feel free to use skinless and boneless chicken thighs for this recipe instead of chicken breast.
You can use water or vegetable stock as well.
You can exchange honey with maple syrup.
Leftovers can last up to 5 days in the fridge for 3 months in the freezer. Make sure to store them in an airtight container.
