Ingredients:
4 medium boneless, skinless chicken breasts 4 oz each
1 teaspoon paprika
1 teaspoon ground mustard seed
1/4 teaspoon cayenne pepper or to taste
1/2 teaspoon kosher salt
1/8 teaspoon ground pepper
2 tablespoons olive oil divided
Mustard sauce:
1/4 c honey
3 tablespoons chicken stock
2 tablespoons Dijon mustard
1 tablespoon wholegrain mustard
1 teaspoon white vinegar
1 teaspoon sriracha sauce or to taste
a small handful of fresh thyme to garnish
Directions:
Step 1: In a small mixing bowl, add all the ingredients for the spices. Whisk until well combined.
Step 2: Rub the mixed seasonings all over the chicken.
Step 3: In another mixing bowl, add all the ingredients for the mustard sauce. Whisk until well mixed.
Step 4: Place a non-stick pan on the stove and turn the heat to medium.
Step 5: Add oil and allow it to become hot.
Step 6: Add the chicken and sear each side for about 2 minutes or until they turn golden brown.
Step 7: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 8: Put the seared chicken into a baking dish, then place it inside the preheated oven. Bake for about 25 minutes or until done.
Step 9: Remove from the oven and let the chicken sit at room temperature to cool for a few minutes.
Step 10: Serve warm and enjoy!
