For Thai Sauce:
3 tablespoons Fish Sauce
1 tablespoon Rice/White Vinegar
2 tablespoons Brown Sugar
3 tablespoons Oyster Sauce
2 tablespoons Soy Sauce
2 tablespoons Sriracha
2 tablespoons Water
2 tablespoons Tamarind Puree
For Pad Thai Noodles:
4 ounces/ 125 g Rice Noodles
8 Small, Shrimp, cleaned, deveined
1/3 c Chicken, cut into 1” chunks
4 tablespoons Oil
3 Garlic, cloves, chopped
2 eggs whisked
1/2 c Mung Bean Sprouts
1/4 c Carrot, julienned
1/4 c Green Onion/scallions, chopped
Salt and Pepper Powder as per need
1/4 c Peanuts, dry roasted and roughly crushed
Step 1: Refer to the directions provided on the package of the rice noodles on how to cook them.
Step 2: In a medium mixing bowl, add the eggs, then whisk until creamy.
Step 3: In a separate mixing bowl, add all the ingredients for the pad Thai sauce, then whisk until well combined.
Step 4: Place a cast iron or wok on the stove and turn the heat to medium.
Step 5: Add in oil and allow it to become hot.
Step 6: Add in the spring onions and minced garlic, then sauté for 1 minute or until aromatic and translucent.
Step 7: Add in the chopped veggies and sauté until translucent. Add more oil if needed.
Step 8: Add in the chicken and shrimp. Saute for a few minutes or until done.
Step 9: Push the shrimp and chicken to the side and add in eggs. Stir until scrambled, then mix everything.
Step 10: Add in the rice noodles and stir until well combined.
Step 11: Add in the sauce and toss until everything is well coated by it.
Step 12: Add in the mung bean sprouts and toss until well combined with the rest of the ingredients.
Step 13: Remove from the heat and sprinkle crushed peanuts and chopped cilantro on top.
Step 14: Serve warm and enjoy!
