2 tablespoons olive oil
2 large boneless, skinless chicken breasts
cracked black pepper
4 garlic cloves pressed
1 1/2 c marinara sauce
1 tablespoon fresh minced basil
1 c shredded Mozzarella cheese
3 tablespoons grated Parmesan cheese
1/2 tablespoons fresh minced basil
Step 1: Cut the chicken breasts into two and make 4 slices.
Step 2: Season with salt and pepper the chicken slices.
Step 3: Press the “sauté” button on the Instant Pot and allow it to become hot.
Step 4: Drizzle olive oil into the pot.
Step 5: Add the chicken slices and cook each side until brown.
Step 6: Remove the chicken breasts from the pot and place them on a clean plate.
Step 7: Add the garlic into the pot and sauté for about a minute or until aromatic.
Step 8: Add the basil and marinara sauce. Stir until well combined.
Step 9: Turn off the “sauté” button and leave the mixture inside.
Step 10: Put the chicken back to the pot and make sure to coat them with the sauce.
Step 11: Cover the pot with a lid and seal. Cook for about 3 minutes on a low setting.
Step 12: Turn off the Instant Pot and do a quick release.
Step 13: Add the Parmesan cheese, Mozzarella cheese, and basil on top of each chicken slice.
Step 14: Cover the pot and allow the cheese to melt for about 5 minutes.
Step 15: Serve and enjoy!
