This Jambalaya recipe is the best thing you will ever try today. Enjoy!
Ingredients:
1¼ lb (565g) chicken thighs
2 c (440g) Jasmine rice
½ – 1-lb shrimps, thawed (we used 10 16/20 shrimps)
1 lb (454g) Andouille sausages or Kielbasa sausages, ¼” slices
2 ribs (195g) celery, diced
1 (190g) bell pepper, diced
1 tbsp (18g) unsalted butter + 1 tbsp olive oil (or 2 tbsp olive oil)
1 can (14.5ounces) of crushed or diced tomatoes
1 (211g) onion, diced
8 (32g) garlic cloves, minced
1 tsp (5.8g) tomato paste
1½ tbsp (22.5ml) regular soy sauce
2 c (500ml) unsalted chicken stock
¼ tsp (0.2g) dried thyme
¼ tsp (0.25g) dried oregano
1 tsp (3g) smoked paprika
½ – 1 tsp (1.2g) cayenne pepper (adjust according to your spicy preference)
Garnish
2 stalks green onion, thinly sliced
Directions:
Step 1: Press the “sauté” button on the Instant Pot and allow it to become hot.
Step 2: Add 1 tablespoon of unsalted butter and 1 tablespoon of olive oil. Allow them to melt and become hot.
Step 3: Use paper towels to pat dry the chicken thighs and season all sides with salt and pepper.
Step 4: Add 1 1/4 pound of chicken thighs on the other half of the pot and shrimps on the other.
Step 5: Cook each side for 3 1/2 minutes or until brown.
Step 6: Remove the shrimp from the pot.
Step 7: Add the sausages and cook for 3 minutes or until brown.
Step 8: Add the green bell pepper, sliced onions, and celery. Sauté for about 2 minutes or until translucent.
Step 9: Add the minced garlic, dried thyme, tomato paste, smoked paprika, dried oregano, and cayenne pepper. Cook for 1 more minute.
Step 10: Add 1/2 cup of chicken stock and scrape the bottom to get the brown bits on the bottom.
Step 11: Add soy sauce and stir until well blended.
Step 12: Add the cooked chicken and jasmine rice over.
Step 13: Add the unsalted stock and make sure to submerge everything with it.
Step 14: Add sliced tomatoes on top.
Step 15: Seal the Instant Pot and cook for about 7 minutes on a high setting.
Step 16: Do a quick release and add the shrimp. Add more seasonings if needed.
Step 17: Sprinkle chopped green onions on top.
Step 18: Serve and enjoy!
