2 tablespoons olive oil
2 pork tenderloins
1 teaspoon kosher salt
½ teaspoon black pepper
2 teaspoons Italian seasoning
3 cloves garlic, pressed
1 ¼ c water, divided
2 tablespoons soy sauce
½ c light brown sugar, packed
¼ c balsamic vinegar
2 tablespoons cornstarch
Step 1: Add the Italian seasoning, salt, and pepper into a small mixing bowl. Whisk until well mixed.
Step 2: Apply olive oil all over the tenderloins and season them with the mixed seasonings.
Step 3: Press the “Sauté” button on the Instant Pot.
Step 4: Add the tenderloins and pressed garlic. Cook for6 minutes or until the tenderloins are brown and the garlic is aromatic. Make sure to flip the tenderloins every 2 minutes.
Step 5: Remove the tenderloins from the pot.
Step 6: Add 1 cup of water into the pot and scrape the bottom to get the brown bits. Press the “Cancel” button.
Step 7: Add the brown sugar, balsamic vinegar, and soy sauce. Whisk until well combined.
Step 8: Put the tenderloins back to the pot.
Step 9: Seal the lid and press the “High Pressure”, then cook for about 10 minutes.
Step 10: Do a natural release for about 10 minutes, then a quick release.
Step 11: Remove the tenderloins from the pot and place them on a cutting board.
Step 12: Press the “Sauté” button on the Instant Pot.
Step 13: Add water and cornstarch in a small mixing bowl. Whisk until well combined.
Step 14: Add the dissolved cornstarch into the pot. Whisk until the texture become thick.
Step 15: Slice the pork tenderloins into small cuts.
Step 16: Drizzle balsamic vinegar on top.
Step 17: Serve and enjoy!
