1 box white cake mix
1 stick butter, room temperature
1 1/4 cups buttermilk
3 Egg whites
1 Tablespoon vanilla extract
1/2 teaspoon almond extract
8 ounces can of crushed pineapple, drained
1/2 cup sweetened flake coconut
2 cups pecans, chopped, divided
8 ounces cream cheese, room temperature
3/4 cup butter, room temperature
2 teaspoons vanilla extract
4 cups confectioners’ sugar
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in three 8-inch cake pans.
Step 3: Add the cake mix, buttermilk, egg whites, 1 stick of butter, and the extracts into a large mixing bowl. Beat until well mixed.
Step 4: Add the coconut, crushed pineapple, and 1 cup of pecans. Beat more until well mixed.
Step 5: Transfer the batter into the greased pans and spread it evenly.
Step 6: Place the pans inside the preheated oven and bake for 35 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 7: Remove the cakes from the oven and let them sit at room temperature to cool.
Step 8: Meanwhile, in a mixing bowl, add the cream cheese and butter. Beat until well blended.
Step 9: Add confectioners’ sugar and vanilla. Beat until well blended. Add a bit of milk if the texture of the frosting gets thick.
Step 10: Frost the cakes with the mixture.
Step 11: Garnish the cakes with the rest of the pecans.
Step 12: Serve and enjoy!
