These heavenly muffins are what you just might need today! The rich flavours infused in these delicious treats are superb! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Enjoy!
Ingredients:
½ c butter
1 ¼ c white sugar
1 tsp vanilla extract
½ tsp salt
2 Eggs
1 ¾ c all-purpose flour
2 tsp baking powder
½ tsp ground cinnamon
½ c milk
2 c peeled, cored, and sliced apples
½ c walnuts
¼ c white sugar
½ tsp ground cinnamon
3 tbsp all-purpose flour
2 tbsp butter, cubed
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Apply cooking spray in a large muffin pan.
3. Add 1 1/4 cup of sugar, vanilla, and 1/2 cup of butter into a large mixing bowl. Beat until well combined.
4. Add eggs gradually and beat every addition.
5. In another mixing bowl, add 1 3/4 cups of flour, 1/2 tsp of cinnamon, and baking powder. Whisk until well combined.
6. Transfer the mixture into the flour mixture together with milk and beat until well blended.
7. Add the apples and walnuts. Stir until well mixed.
8. Transfer the mixture into the muffin cups.
9. Sprinkle cinnamon crumble over each cup.
For the Cinnamon Crumble:
1. Add 1/2 tsp of cinnamon, 1/4 cup of white sugar, 2 tbsp of butter, and 3 tbsp of all-purpose flour into a mixing bowl. Stir until well combined.
2. Spread the mixture over the muffins.
3. Place the muffins inside the preheated oven and bake for about 30 minutes or until a toothpick comes out clean after inserting it in the middle.
4. Remove from the oven and allow them to cool at room temperature.
5. Serve and enjoy!
