Gumbo is my husband’s favorite dish. He’s requesting it over and over again. Thanks to this recipe, I can make his favorite fuss-free. He even asked for it when his friends came over the other week! Unlike the traditional Gumbo recipe, this recipe uses Xanthan Gum in place of roux and okra. Even if this is not a real Gumbo, still this is as good, if not better!

4 tablespoons Garlic in Olive Oil
3 pounds Chicken Thighs, boneless and skinless
1 pound Sausage, cut into rounds
1 pound frozen Shrimp, deveined, no tails
1 Bell Pepper, diced
2 Celery Stalks, diced
1 Onion, Diced
6 oz. Tomato Paste
1 tablespoon Cajun Seasoning
15 oz. Diced Tomatoes
1/2 teaspoon Xanthan Gum
1-2 c. Chicken Bone Broth
1/2 teaspoon each: Cayenne, Thyme, Oregano, Pepper
How to make Keto Gumbo
Step 1: In a slow cooker, add all the ingredients. Mix well.
Step 2: Set to cook for 3 to 4 hours on high or 7 to 8 hours on low.
Step 3: Twenty minutes before serving, add the shrimp.
Step 4: Serve the Gumbo immediately. Enjoy!
