I have never tried anything like this! A big thanks to my sister, Cath, for this recipe. I am so glad that I gave it a try because I never would have tasted perfection if it weren’t for you! Oh, man, you have got to give this one a try, I’m telling you! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Ingredients:
3 pounds Chicken Thighs, boneless and skinless (I used the ones from my ButcherBox)
1 pound frozen shrimp, deveined, no tails
1 pound Sausage, cut into rounds
1 Bell Pepper, diced
1 Onion, Diced
2 Celery Stalks, diced
4 tablespoons Garlic in Olive Oil
6 oz Tomato Paste
15 oz Diced Tomatoes
1 tablespoon Cajun Seasoning
1/2 teaspoon each: Cayenne, Thyme, Oregano, Pepper
1/2 teaspoon Xanthan Gum
1-2 c Chicken Bone Broth
Directions:
1. In a slow cooker, add the add all the ingredients. Beginning with the chicken and ending with the broth. The only ingredient you will not add is the shrimp.
2. Cover the slow cooker and seal. Cook for about 8 hours on a low setting or 4 hours on a high setting.
3. 20 minutes before cooking time ends, add the shrimp. Cover and cook until done.
4. Serve immediately and enjoy!
