I am so glad that I gave it a try because I never would have tasted perfection! My kids could not get enough of these Lemon Bars! These are best served with your favourite cup of coffee. Ingredients:
For the Crust:
1 c all-purpose flour
1/4 c powdered sugar
1/2 c cold butter
For the Lemon Filling:
2 large eggs
1 c granulated sugar
3 tbsp lemon juice
2 tbsp all-purpose flour
1/2 tsp baking powder
1/4 tsp lemon zest
3 tbsp sifted powdered sugar for the topping
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×9-inch baking pan.
Step 3: In a small mixing bowl, add sugar and flour. Whisk until well mixed.
Step 4: Add butter and use a pastry blender to mix.
Step 5: Transfer the mixture into the greased baking pan and press it onto the bottom.
Step 6: Place it inside the preheated oven and bake for about 15 minutes.
Step 7: Meanwhile, in a mixing bowl, add sugar, egg, flour, lemon zest, and baking powder. Beat until well mixed.
Step 8: Spread the mixture on top of the crust.
Step 9: Put it back inside the oven and bake for another 25 minutes.
Step 10: Remove from the oven and allow it to cool at room temperature.
Step 11: Sprinkle powdered sugar on top.
Step 12: Slice it into 12 even squares.
Step 13: Serve and enjoy!
