1 1/2 pound (650g) sirloin steak, sliced against the grain
2 broccoli heads, cut into florets
2 tbsp olive oil
4 garlic cloves, minced
3 tbsp butter or ghee
Juice of 1/2 lemon
1/4 c (60ml) low-sodium beef broth
1/4 c chopped parsley + or garnish
1/4 tsp crushed red pepper flakes, optional
Fresh cracked black pepper, to taste
Fresh thyme, for garnish
The steak marinade:
1/3 c low-sodium soy sauce (or coconut amino if you’re strictly paleo)
1/2 c olive oil
1 tbsp Sriracha sauce (or any hot chilli sauce you like)
Directions:
1. In a mixing bowl, add all the ingredients for the marinade. Stir until well mixed.
2. Add the steak slices and stir until well coated.
3. Place the bowl inside the fridge to marinate for half an hour.
4. Slice the broccoli and steam for about 2 minutes. Rinse with cold water to stop the cooking process.
5. Place a skillet on the stove and turn the heat to medium-high.
6. Add butter and oil, then allow them to melt and become hot.
7. Add the steaks and cook each side for about 2 minutes or until brown.
8. Remove the steaks from the skillet onto a clean plate.
9. In the same skillet, add butter and allow it to melt.
10. Add the garlic, beef broth, the rest of the marinade, and lemon juice. Simmer for a few minutes.
11. Add the blanched broccoli and fresh parsley. Toss everything until well combined.
12. Put the steaks back to the skillet and toss again until well combined.
13. Garnish with chilli flakes, thyme, and parsley.
