As perfect as it is, feel free to add more ingredients if you like. I am sure that you can do a lot to make this recipe even better. Enjoy!
Ingredients:
1 tsp lemon juice
1 tbsp lemon zest
1/4 c plain breadcrumbs
1/4 c grated Parmesan cheese
4 tbsp plain breadcrumbs
2 tbsp olive oil divided
2 5 ounces cans of tuna in water well drained
3 garlic cloves grated
2 tbsp mayo
3 tbsp grated Parmesan cheese
1/4 c finely chopped white onion
1/4 tsp salt
1 tsp dried parsley
1/4 tsp black pepper
1 large Egg
Directions:
1. Drain the canned tuna.
2. In a mixing bowl, add onion, garlic, lemon juice, egg, mayonnaise, lemon zest, dried parsley, Parmesan cheese, salt, and pepper. Stir until well blended.
3. In another mixing bowl, add the grated cheese and the rest of the breadcrumbs. Stir until well mixed.
4. Form 1/4 cup of the tuna mixture into a patty.
5. Dredge the patty into the breading, then toss until well coated. Shake off any excess.
6. Place a pan on the stove and turn the heat to medium.
7. Add oil and allow it to become hot.
8. Add the patty and cook each side for a few minutes until golden brown.
9. Transfer the patty onto a clean plate. Let it sit at room temperature for a few minutes.
10. Serve with lemon wedge and spinach. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the freezer. They can last up to 3 months.
