The chicken in this Maple Dijon dish is sweet and spicy, and it comes together in no time at all! This mouthwatering dish can be prepared in less than an hour and is baked with a simple maple mustard sauce.
Ingredients
2 tbsp olive oil + 1 ½ tsp for the baking dish
4 boneless + skinless chicken breasts
4 garlic cloves – minced
4 tbsp Dijon mustard
1 tbsp parsley flakes
4 tbsp maple syrup
sea salt + fresh pepper to taste
¼ tsp cayenne pepper – optional
How to make Maple Dijon Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees. Using olive oil, coat a large baking dish.
Step 2: Heat 2 tbsp olive oil in a small saucepan over medium-low heat. Once hot, add the minced garlic. Stir and cook until the garlic is tender and lightly browned. Take the pan off the heat and stir in the maple syrup and mustard. Next, stir in the spices. Set aside.
Step 3: In the prepared baking dish, place the chicken breasts. Using a knife, lightly score the tops of the chicken breasts and season with salt and freshly ground pepper. With the maple mustard mixture, cover the chicken.
Step 4: Place in the preheated oven and bake for about 30 minutes, basting the chicken with the sauce every 10 minutes or so. The chicken is done once their internal temperature reaches 165 degrees F. Note that the cooking time varies on the size and cut of the chicken.
Step 5: Remove from the oven when done and enjoy the Maple Dijon Chicken warm, making sure to spoon the sauce from the baking dish over the chicken. Enjoy!
Notes:
In a sealed container, keep any leftovers and store them in the fridge for up to 2 days.
This Maple Dijon Chicken pairs well with quinoa or brown rice and roasted veggies like brussels sprouts, sweet potatoes, and broccoli.
You can use cold leftovers to make a sandwich or salad.
Substitute dried with some fresh parsley or fresh thyme. You can also garnish the chicken with sprigs if desired.
In this recipe, I used boneless chicken breasts. But you are welcome to swap them with chicken thighs or bone-in chicken.
