Ingredients:
16 ounces box uncooked lasagna noodles
2 8 ounces bags Colby Jack cheese shredded, divided use
4 ounces can of chopped green chillies
2 pounds 93% or 96% lean ground beef
16 ounces can of refried beans
24 ounces jar Pace mild or medium chunky salsa divided use (or your favourite salsa)
2 c water
16 ounces ctn. sour cream
1 pkg. taco seasoning or Homemade Taco Seasoning
3 small Roma tomatoes chopped, for garnish
3 green onions chopped, for garnish
2.25 ounces can ripe olives sliced, drained, for garnish
Directions:
1. Place a skillet on the stove and turn the heat to medium.
2. Add the beef, then cook until crumbly and brown.
3. Add the chiles, 2 tbsp of salsa and beans. Stir until well combined. Let it simmer for 5 minutes.
4. Apply cooking spray in a 9×13-inch baking dish.
5. Add 1 cup of the meat mixture into the prepared baking dish and spread it evenly.
6. Add 4 lasagna noodles over the meat mixture.
7. Add 1/3 of the beef mixture and spread it evenly.
8. Sprinkle a generous amount of cheese over the beef mixture. Repeat the process with the rest of the ingredients until they are arranged in layers.
9. Prepare the oven and preheat to 350 degrees F or 175 degrees C.
10. In a mixing bowl, add water and the rest of the salsa. Stir until well blended.
11. Pour the mixture over the layers, then cover with aluminium foil.
12. Place it inside the preheated oven and bake for about 1 hour and 30 minutes or until done.
13. Remove the cover and sour cream, cheese, onions, olives, and tomatoes on top.
14. Bake for another 15 minutes or until the cheese is melted completely.
15. Remove from the oven and allow it to cool for at least 10 minutes at room temperature.
16. Slice into even pieces.
17. Serve and enjoy!
