Ingredients:
1 tsp ground cumin
1 tsp dried oregano
1 1/2 lbs. skirt steak, cut into 1/2-inch pieces
3 cloves garlic, minced
2 tbsp reduced-sodium soy sauce
2 tsp chili powder
2 tbsp freshly squeezed lime juice
1/2 c chopped fresh cilantro leaves
3/4 c diced red onion
1 lime, cut into wedges
12 mini flour tortillas, warmed
2 tbsp canola oil, divided
Directions:
1. Add lime juice, soy sauce, oregano, cumin, garlic, 1 tbsp canola oil, and chili powder into a mixing bowl. Stir until well blended.
2. Add steak and marinade mixture into a large mixing bowl. Toss until well mixed. Allow the steak to marinate for 1 to 4 hours.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add 1 tbsp of canola oil and allow it to become hot.
5. Add the steak and marinade, then cook each side for 5 minutes or until cooked to your preference.
6. Serve in tortillas, then squeeze lime on top and garnish with cilantro and onion. Enjoy!
Note:
It is important to marinate the steak. I suggest you marinate it for 4 hours.
