I will never get tired of recommending this spectacular recipe to my friends, and that includes you! These Mint Chocolate Pudding Cookies are simply the best! A big thanks to my sister, Anna, for this awesome recipe! You are more than welcome to tweak this recipe to your liking. I am sure that you can do a lot to make it even better! Ingredients:
1 1/2 c chocolate chips
1 small box instant vanilla pudding mix 3.4 ounces
1/2 c sour cream
1 Egg
1 c sugar
1/2 teaspoon baking soda
2 c all-purpose flour
3 drops blue colouring + 10-15 drops green colouring
1/2 c butter softened (1 stick)
2 teaspoons mint extract
1/2 teaspoon salt
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. In a mixing bowl, add the butter and sugar. Beat a couple of times until creamy.
3. Add the egg, sour cream, and pudding mix. Beat until well blended.
4. In another bowl, add salt, flour, and baking soda. Whisk until well blended.
5. Transfer the flour mixture into the pudding mixture. Whisk until well blended.
6. Add food colouring and mint extract. Stir until well blended.
7. Add the chocolate chips and stir until just mixed.
8. Apply cooking spray onto a baking sheet.
9. Spoon the mixture and drop each onto the prepared baking sheet. Make sure to leave a small space between each cookie dough.
10. Place the baking sheet inside the oven and bake the cookies for about 10 minutes or until done.
11. Remove the cookies from the oven and allow them to cool completely at room temperature.
12. Serve and enjoy!
