We just had the best dinner! This Moroccan Chicken will surely satisfy all your cravings today! Serve it with mashed potatoes or rice, and you have yourself a meal to remember. Enjoy!
Ingredients:
For the spice blend
1/2 tsp ground ginger
1/4 tsp ground turmeric
1/2 tsp cinnamon
1/2 tsp ground coriander
1 tsp paprika
1 tsp ground cumin
For the chicken
1 1/2 tsp minced garlic
2 tbsp all-purpose flour
1 onion halved and sliced
1 tbsp olive oil
1/4 c golden raisins
6 bone-in, skin-on chicken thighs
2 tsp lemon juice
1 1/2 c chicken broth
1/4 c chopped cilantro leaves
1/2 c pitted green olives
salt and pepper to taste
Directions:
Spice Blend:
1. In a mixing bowl, add all the ingredients for the spices. Whisk until well blended.
Chicken:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Place a large pot on the stove and turn the heat to medium.
3. Add oil and allow it to become hot.
4. Sprinkle salt and pepper over the chicken thighs, then rub each until well coated.
5. Add the chicken thighs into the pot, then sear each side for about 5 minutes or until they turn brown. Transfer the chicken thighs onto a clean plate.
6. In the same pot, add the onions and sauté until translucent.
7. Add the garlic and sauté until aromatic.
8. Add flour and the spice blend. Stir and cook for a minute to remove the raw taste of the flour.
9. Add the chicken broth, salt, and pepper. Stir until well blended. Make sure to scrape the bottom of the pot to get the browned bits.
10. Put the chicken thighs back into the pan and toss until well coated by the delicious sauce.
11. Add the raisins and stir until well mixed.
12. Cover the pan, then transfer it inside the preheated oven. Bake the chicken thighs for about 30 minutes or until done.
13. Remove from the oven. Remove the cover, then add lemon juice and olives. Stir until well mixed.
14. Sprinkle freshly chopped cilantro on top to garnish.
15. Serve and enjoy!
