Ingredients:
8–10 ears fresh corn on the cob, or 5 c canned corn, drained
2 large Eggs
1 c half and half
½ tsp kosher salt
1/8 tsp white pepper
Few grinds fresh nutmeg
¾ c of crushed oyster crackers, divided (crush the crackers, then measure)
3 tbsp melted butter, divided
½ c of sharp cheddar cheese, shredded
Paprika
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Drain the canned corn or scrape the fresh corn. You should have about 5 cups of it.
Step 3: Brush with butter a 9-inch casserole dish.
Step 4: Add the eggs, half & half, nutmeg, salt, and pepper. Beat until well mixed.
Step 5: Add 1/2 of the cracker crumbs, two tablespoons of melted butter, and corn. Stir until well combined.
Step 6: Transfer the mixture into the pan and spread it evenly on the bottom.
Step 7: Sprinkle a generous amount of cheese on top.
Step 8: Add the rest of the cracker crumbs and the rest of the butter over.
Step 9: Sprinkle paprika on top as well.
Step 10: Place it inside the preheated oven and bake for about 50 minutes or until golden brown.
Step 11: Remove from the oven and allow it to cool at room temperature.
Step 12: Serve warm and enjoy!
