This recipe has always been a part of my family since I was a little kid. I remember my grandma used to cook these Neapolitan Eggplants all the time! These heavenly treats are the reason why I love eating vegetables to this day. Well, it’s not that healthy because of all the cheese, but it’s still a vegetable, right? Anyway, my only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! As perfect as this recipe already is, feel free to add more ingredients if you wish. I am sure that you can do a lot to take this very simple recipe to the next level! Ingredients:
300 millilitres of cooking oil
150gm of cooked ham
3 Eggs
2 large eggplants
150gm of flour
8 tbsp of tomato sauce
500gm of breadcrumbs
150 grams of mozzarella cheese
Salt, to taste
Oregano, to taste
Directions:
1. Prepare the oven and preheat 175 degrees C or 350 degrees F.
2. Slice each eggplant lengthwise to about 1 cm thick cuts.
3. In a mixing bowl, add flour.
4. In another bowl, add eggs and beat until creamy.
5. In the third bowl, add breadcrumbs.
6. Coat each eggplant slice with flour, then into the eggs, and lastly into breadcrumbs. Shake off any excess. Repeat the process with the rest of the eggplant slices.
7. Arrange the eggplants into a baking pan.
8. Top each eggplant with 1 tbsp of tomato sauce, then spread it evenly.
9. Add a slice of ham over each eggplant, then sprinkle a generous amount of mozzarella cheese.
10. Place the baking pan inside the preheated oven and bake the eggplants until they are gratin or the cheese is melted completely.
11. Remove from the oven and garnish with oregano.
12. Serve and enjoy!
