Ingredients:
2 ½ tablespoons all-purpose flour
4 slices provolone cheese
1 c shredded Gruyere cheese or Swiss
1 c plus 4 Tbsp beef stock
1 tablespoon extra-virgin olive oil
2 yellow onions were peeled, cut in half, and sliced into half-moon-shaped slices
¼ teaspoon garlic powder
3 tablespoons unsalted butter
½ teaspoon dried thyme
fresh thyme sprigs for adding to the pan
4 boneless pork chops about 1–1 ½ inches thick
½ teaspoon kosher salt
1/4 teaspoon black pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Place a large cast-iron skillet on the stove and turn the heat to medium-high.
3. Add olive oil and butter, then allow them to become hot.
4. Add the onions, then sauté for about 3 minutes or until translucent.
5. Add 4 tablespoons of beef stock, then stir until well blended. Cook the onions for about 12 minutes or until they turn golden brown. Transfer the onions onto a clean plate.
6. Sprinkle garlic powder, thyme, salt, and pepper over the pork chops. Toss until well coated.
7. In the same skillet over medium heat, add olive oil and allow it to become hot.
8. Add the pork chops, then sear each side for about 3 to 4 minutes or until they turn golden brown. Move to a clean plate.
9. Put the onions back into the skillet, then sprinkle flour over. Whisk and cook the flour for one minute to remove the raw taste.
10. Add the rest of the beef stock, then stir until well blended. Allow the mixture to boil. Sprinkle salt and pepper to season.
11. Lay the pork chops into the sauce, then toss until well coated.
12. Top each pork chop with provolone cheese and shredded Gruyere. Sprinkle fresh thyme on top.
13. Transfer the skillet inside the preheated oven and bake the pork chops for about 8 to 10 minutes or until the cheese has melted completely.
14. Serve and enjoy!
