Ingredients:
8 oz linguine
1-pint cherry tomatoes sliced in half
2 oz baby spinach leaves
1 small onion finely sliced
3 garlic cloves finely sliced
A small handful of basil leaves roughly chopped
2 tbsp extra virgin olive oil
1/2 tsp crushed red pepper
1/2 tsp salt
2 oz parmesan cheese grated (optional)
Directions:
Step 1: Put the linguine, spinach, cherry tomatoes, garlic, basil, garlic, and sliced onions into a large pan.
Step 2: Drizzle olive oil and sprinkle salt and pepper to taste.
Step 3: Add 4 cups of boiling water.
Step 4: Place the pan on the stove and turn the heat to medium.
Step 5: Cook everything for about 10 minutes or until the sauce is thick.
Step 6: Remove the pan from the heat and sprinkle a generous amount of Parmesan cheese on top as well as fresh basil.
Step 7: Serve immediately and enjoy!
Notes:
1. Feel free to use pasta instead of linguine for this recipe.
2. Omit the Parmesan cheese as well if you want it to be vegan.
3. Feel free to add your preferred veggies as well.
