One-Pot Black Pepper Chicken

If you are looking for a nice and awesome dinner, then you have come to the right page! This recipe will make your dinner very special. I serve it with brown rice but fried rice is perfect as well pretty much any type of rice will work for this Black pepper chicken. Give this one a try today and I am 100 percent certain that your family is gonna love it. Just follow these simple and easy steps and you are in for a treat. Enjoy!

INGREDIENTS

1-½ pounds boneless, skinless chicken breasts, cut into cubes
1 red bell pepper, seeded and cut into strips
1-½ teaspoons freshly ground black pepper
1-inch fresh ginger root, peeled and finely chopped
2 cloves garlic, peeled and finely minced
3 tablespoons lite soy sauce, divided (optional, coconut Aminos, Tamari or Bragg Liquid Aminos)
3 tablespoons white vinegar, divided
1 tablespoon coconut palm sugar or honey
2 tablespoons olive oil

How to make One-Pot Black Pepper Chicken

Step 1: In a medium mixing bowl, add half of the vinegar, half of the soy sauce, and sweetener. Whisk until well mixed.

Step 2: Toss in the chicken and coat it completely.

Step 3: Place inside the refrigerator for 30 minutes to allow the marinate to incorporate.

Step 4: Place a skillet on the stove and add oil.

Step 5: Turn the heat to medium-low then add the ginger and garlic.

Step 6: Cook the ginger and garlic for 30 seconds until aromatic and slightly golden.

Step 7:  Add in the marinated chicken and cook for 3 minutes. (Add the juice as well.)

Step 8: Add in the chopped bell pepper and the rest of the vinegar, soy sauce, and black pepper.

Step 9: Cok for 10 minutes until the bell peppers and chicken are soft and cooked.

Step 10: Remove the skillet from the heat.

Step 11: Top quinoa or brown rice with the chicken.

Step 12: Serve and enjoy!
