Ingredients:
14 ounces smoked sausage, sliced on the diagonal
1 lb. chicken cut into bite-sized pieces
4 tbsp olive oil
4 ounces parmesan cheese freshly shredded, more as needed
4 cloves garlic, minced
1-quart low-sodium chicken broth
1 1/2 tbsp Cajun seasoning, plus more to taste
2 1/2 c heavy cream
1 lb. penne pasta, uncooked
1/2 tsp of kosher salt
freshly ground black pepper to taste
Italian Parsley garnish
Directions:
1. Place a large pot on the stove and turn it to medium.
2. Add olive oil and allow it to become hot.
3. Season the chicken with salt and pepper, then rub until well coated.
4. Add the chicken into the pot and cook until brown.
5. Add the sausage and cook until brown as well.
6. Add the garlic and sauté until aromatic.
7. Add the heavy cream, chicken broth, Cajun seasoning, and dried pasta. Stir until well combined. Allow the mixture to simmer.
8. Turn the heat to low, then cover the pot. Cook the pasta for about 15 minutes or until al dente.
9. Remove the pot from the stove, then add the Parmesan cheese gradually and stir every addition until well blended.
10. Add more Cajun seasoning and freshly chopped parsley. Stir until well combined.
11. Serve and enjoy!
