One-Pot Chicken Parmesan Pasta

Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins | Yield: 6 Servings

Cheesy, juicy, and easy! This One-Pot Chicken Parmesan Pasta just became my favorite! Everything about this dish is perfect. Enjoy it in just 30 minutes!

Ingredients:

24-ounce jar of your favorite marinara sauce (I used Newman’s Own)
1/2 teaspoon garlic powder
1 medium yellow onion, minced
water to fill an empty marinara sauce jar
2-3 boneless, skinless chicken breasts, diced into bite-sized pieces
16 ounces dried shortcut pasta (I used rigatoni)
1/2 c Parmesan cheese
1 teaspoon Italian seasoning
3 cloves garlic, minced
salt and pepper, to taste
additional dried Italian seasoning, optional
1 c mozzarella cheese
fresh parsley and/or basil, minced for garnish

Directions:

1. Place a large skillet on the stove and turn the heat to medium-high.

2. Add a bit of olive oil and allow it to become hot.

3. Add the chicken, then sprinkle garlic powder, Italian seasoning, salt, and pepper on top to season. Cook for about 5 minutes or until brown. Transfer onto a clean plate.

4. In the same skillet, add garlic and onion. Sauté for 2 minutes or until aromatic and translucent.

5. Add the marinara sauce, then stir until well blended.

6. Add water to the jar, then shake it to get the remaining sauce. Pour it into the skillet. Stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.

7. Allow the mixture to boil, then turn the heat down to low and simmer.

8. Add the pasta and chicken, then stir until well coated by the delicious sauce. Cook the pasta for about 10 to 15 minutes or until al dente.

9. Add 1/4 cup of mozzarella cheese and Parmesan cheese. Stir until well blended.

10. Sprinkle the rest of the mozzarella cheese on top. Cook everything for 2 more minutes or until the cheese has melted completely.

11. Sprinkle freshly chopped basil or parsley on top to garnish.

12. Serve and enjoy!
