Ingredients:
1/4 c extra virgin olive oil
2-3 cloves garlic, minced
4-5 sprigs of fresh thyme, one for each fillet
1 pound flounder fillets, thin fillets — about 1/4 inch thick
lemon wedges
sea salt
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Apply cooking spray in a 9×13-inch glass baking dish.
3. Use cool water to rinse the flounder fillets.
4. Place the flounder fillets into the prepared baking dish and arrange them in a single layer.
5. In a mixing bowl, add garlic and olive oil. Stir until well blended.
6. Pour the oil mixture on top of the flounder fillets.
7. Top each fillet with a sprig of thyme, then sprinkle salt and pepper to season.
8. Place the baking dish inside the preheated oven and bake the flounder fillets for about 15 minutes or until fork-tender.
9. Remove from the oven.
10. Serve right away with your lemon wedges. Enjoy!
