This five-ingredient dish is a breeze to make and feeds a family of four. An awesome melts in your mouth roasted zucchini with parmesan that gives this lavish green squash a subtle little crunch. 4 large zucchini or summer squash
2 teaspoons garlic powder
1/3 cup parmesan cheese, freshly grated
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste
How to make Oven Roasted Parmesan Zucchini
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Slice the squash into 1/4 inches rounds. Transfer the sliced squash into a large bowl and add in the olive oil, garlic powder, salt, and pepper. Then, toss to coat.
Step 3: In a single layer, arrange the squash on a rimmed baking sheet. Evenly sprinkle over the parmesan cheese.
Step 4: Place inside the preheated oven and bake for about 9 to 10 minutes or until soft.
Step 5: Once the squash is tender, turn the broiler on high. Broil for another 2 to 3 minutes or until golden brown.
