Oven Roasted Parmesan Zucchini

Zucchini is rich in vitamins and minerals. It has great health benefits. It is such an amazing squash that is perfect for health-conscious individuals. I love this summer squash because it is so versatile. I have been reading all about it and I am amazed how it helps improving digestion, lower the risk of heart disease to helping our bones, thyroid, and prostate. And there are a lot of recipes that use zucchini; from pasta to different savory dishes. Like this Roasted Parmesan Zucchini. A delicious roasted dish that takes only fifteen minutes to make!

This five-ingredient dish is a breeze to make and feeds a family of four. An awesome melts in your mouth roasted zucchini with parmesan that gives this lavish green squash a subtle little crunch. Super delicious and simple even my picky eaters dig this. This is perfect for busy days and excellent for an on-the-go mom like me. Quick, easy, simple, and delicious. I cannot ask for more! This is a must-have and a real keeper.

INGREDIENTS

4 large zucchini or summer squash
2 teaspoons garlic powder
1/3 cup parmesan cheese, freshly grated
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste

How to make Oven Roasted Parmesan Zucchini

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Slice the squash into 1/4 inches rounds. Transfer the sliced squash into a large bowl and add in the olive oil, garlic powder, salt, and pepper. Then, toss to coat.

Step 3: In a single layer, arrange the squash on a rimmed baking sheet. Evenly sprinkle over the parmesan cheese.

Step 4: Place inside the preheated oven and bake for about 9 to 10 minutes or until soft.

Step 5: Once the squash is tender, turn the broiler on high. Broil for another 2 to 3 minutes or until golden brown.
