Talk about the perfect breakfast ever! This amazing dish will surely light up your day! Feel free to add more ingredients if you prefer. By the way, this is the best hangover food. Yeah, I’m telling you! Try it and taste it yourself. Enjoy!
Ingredients:
8-10 large potatoes
1 tbsp garlic oil
1 bell pepper, diced (not green if needing low FODMAP)
1/4 c chopped green onion, about 1 bunch
1/2 tsp salt
9 ounces paleo breakfast sausage
8 large Eggs
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Line with parchment paper on a sheet tray.
Step 3: Use a fork to poke small holes onto the washed potatoes.
Step 4: Rub each potato with avocado oil.
Step 5: Arrange the potatoes onto the prepared sheet tray.
Step 6: Place the sheet tray inside the preheated oven and bake for 50 to 60 minutes or until the potatoes are fork-tender.
Step 7: Remove from the oven and allow the potatoes to cool at room temperature to cool for at least 10 minutes.
Step 8: Remove the top of each potato and spoon the insides.
Step 9: Arrange them onto a 13×9-inch pan.
Step 10: Place a large skillet on the stove and turn the heat to medium.
Step 11: Add garlic oil and allow it to become hot.
Step 12: Add the green onion, salt, and pepper. Sauté for 5 minutes or until translucent.
Step 13: Add the sausage and cook for 5 minutes more or until brown.
Step 14: Scramble the cracked eggs in a large mixing bowl.
Step 15: Transfer the sausage mixture into the scrambled eggs.
Step 16: Fill each potato with the mixture and bake for about 40 minutes or until done.
Step 17: Serve and enjoy!
