Ingredients:
nonstick cooking spray
1/3 c grated Parmesan cheese
3 tbsp herb seasoning – divided (any brand – I use Mrs Dash)
1 stick butter – 1/2 c
2 pounds red potatoes – washed
1 tsp salt
1/2 tsp black pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Put one stick of butter into a 9×13-inch baking pan. Place it inside the preheating oven and allow it to melt.
3. Remove the pan from the oven.
4. Prepare the potatoes by slicing and scoring them.
5. Add 2 tbsp of herb seasoning, pepper, and Parmesan cheese into a mixing bowl. Stir until well blended.
6. Sprinkle the seasoning mixture over the melted butter.
7. Arrange the potatoes into the prepared pan.
8. Apply cooking spray over the potatoes, then sprinkle the rest of the herbs.
9. Place it inside the preheated oven and bake for about 40 minutes or until the potatoes are fork-tender.
10. Remove from the oven and let them rest for a few minutes at room temperature.
11. Serve and enjoy!
