Ingredients:
1 Egg – lightly whipped
1 c diced tomatoes
1 lb. ground beef
½ c bread crumbs – or quick oats
1 chopped small onion – about ½ cup
½ green pepper – about ½ cup
1 tsp salt
¼ tsp black pepper
Topping
2 tbsp brown sugar
1 tbsp mustard
⅓ c ketchup
Directions:
1. Prepare the oven and preheat to 350 degrees F or 175 degrees C.
2. In a mixing bowl, add all the ingredients for the meatloaf. Use your clean hands to mix everything until well combined.
3. Transfer the mixture into a baking dish and spread it evenly. Form it into a meatloaf.
4. In a mixing bowl, add all the ingredients for the toppings. Stir until well blended.
5. Spread the mixture on top of the meatloaf.
6. Place it inside the preheated oven and bake for about an hour or until it reaches about 165 degrees F.
7. Remove from the oven and remove the meatloaf from the pan. Let it rest for a few minutes at room temperature.
8. Serve warm and enjoy!
Notes:
I used breadcrumbs for this recipe instead of cornstarch.
You can use only ketchup of the topping but I prefer mixing it with brown sugar and mustard.
Make sure not to overmix the meatloaf.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days or 3 to 4 months inside the freezer.
