This is another amazing recipe that you should not miss! This has oven-roasted tomato sauce. For this recipe, I use fresh tomatoes. Penne Alla Vecchia Bettola is a delicious pink pasta with a delightful vodka sauce!
3 cloves garlic, crushed
1 yellow onion, medium, chopped
1/4 c. olive oil extra virgin
1/4-1/2 tsp chili flakes (depending on how spicy you like it)
1 c. vodka
1/2 c. heavy cream
12-15 Roma tomatoes (depending on size), diced
1/2 c. Parmesan cheese, shredded
3/4 lb penne pasta
1 tsp dried oregano
Parsley or fresh oregano to garnish
Salt and freshly ground black pepper
How to make Penne Alla Vecchia Bettola
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Heat the olive oil in an ovenproof skillet. Once hot, add the onions and cook for about 5 minutes, stirring often until translucent. Next, add the garlic along with the chili flakes and oregano. Continue to cook for an additional minute.
Step 3: Pour in the vodka and cook for 5 to 7 minutes more until reduced by half.
Step 4: Slice the tomatoes and add them to the pan. Continue to cook for additional 5 minutes.
Step 5: Put the lid on and place the skillet in the preheated oven. Roast for about 1 1/2 hours.
Step 6: In the meantime, cook the pasta following the package directions a minute less than al dente.
Step 7: Take the tomatoes out of the oven and transfer them into a blender. Puree the tomatoes. You can set aside some of the liquid if the tomatoes produced too much liquid. Add the liquid to the blender a little at a time until you reach your preferred consistency. If not using a high-speed blender, simply strain the sauce in a mesh strainer to get rid of the seeds/skin.
Step 8: In the pan, add the blended sauce and add cream. Stir well and cook for about 3 minutes. Next, add the grated cheese. To taste, season with salt and pepper.
Step 9: To the sauce, add the cooked pasta. Toss to coat and cook for a minute more.
Step 10: Before serving, garnish the dish with some fresh herbs, extra cheese, and pepper. Serve right away. Enjoy!
