Ingredients:
¼ c olive oil
8 cloves garlic, minced
2 lbs. pork loin
1 6-8 lbs. pork belly
1 c breadcrumbs
¼ c pignoli nuts
3 large oranges
¼ c fresh parsley, chopped
2 tablespoons fennel seeds
2 tablespoons fresh rosemary, chopped
3 tablespoons kosher salt
1 tablespoon crushed red pepper flakes
Directions:
1. Prepare the oven and preheat to 250 degrees C or 500 degrees F.
2. Use paper towels to pat dry the pork skin. Trim out excess portions.
3. Place a pan on the stove and turn the heat to medium-low.
4. Add the fennel seeds and cook for about 5 minutes or more until toasted. Set aside and allow them to cool.
5. Place a pan on the stove and turn the heat to medium.
6. Add 1/4 cup of olive oil and allow it to become hot.
7. Add the garlic and sauté until aromatic.
8. Add the chilli flakes, breadcrumbs, pignoli nuts, fennel seeds, orange juice, and herbs. Stir until well mixed. Remove from the heat.
9. Run a knife on the pork belly skin forming a crisscross pattern.
10. Rub with salt to season.
11. Spread the stuffing mixture over the meat, then top it with orange zest and 1 tsp of salt.
12. Roll the meat, then use kitchen twine to tie the meat several times. Make sure to leave about 1-inch space between each tie.
13. Use paper towels to pat dry the meat, then rub salt all over.
14. Put the porchetta into a roasting pan over a wire rack.
15. Place it inside the preheated oven and roast for about 45 minutes.
16. Reduce the heat to about 300 degrees F, then roast until done. This usually takes about 3 hours to roast. Make sure to check from time to time.
17. Remove the Porchetta from the oven and let it sit at room temperature for at least 30 minutes.
18. Slice, serve, and enjoy!
