For the dough:
500 grams strong white flour
2 tsp salt
7 grams fast action yeast
2 tbsp olive oil
280 millilitres water
For the pesto:
2 garlic cloves, roughly chopped
40 grams basil
20 millilitres olive oil
¼ tsp salt
20 grams pine nuts, toasted
20 grams parmesan, grated
250 grams grated cheddar/mozzarella mix
Extra olive oil
To Make the Dough:
Step 1: In a large mixing bowl, add the flour, yeast, salt, olive oil, and water. Mix until well combined.
Step 2: Knead the dough for about 10 minutes.
Step 3: Cover the dough with cling film and let it double its size at room temperature for about 1 1/2 hours.
To Make the Pesto:
Step 1: Place a frying pan on the stove and turn the heat to medium.
Step 2: Add the pine nuts and toast until aromatic.
Step 3: Remove from the heat and let the nuts cool for at least 5 minutes.
Step 4: In a food processor, add garlic, olive oil, salt, and basil. Pulse until it resembles a thick paste. Set aside 1 tbsp of the paste.
Step 5: Add the Parmesan cheese and pine nuts. Pulse again until well mixed.
To Assemble the Loaf:
Step 1: Place the dough onto a flat surface sprinkled with flour.
Step 2: Roll the dough and sprinkle a generous amount of cheese over. Slice it into 4 even cuts about 50 cm.
Step 3: Stack the 4 slices of dough, then cut it into 4 rectangles.
Step 4: Apply cooking spray in a loaf tin.
Step 5: Place the wedges in the middle of the prepared loaf tin.
Step 6: Cover the space around the dough with cling film. Allow the dough to rise again for another 30 minutes.
Step 7: Prepare the oven and preheat to 400 degrees F or 200 degrees C.
Step 8: Place the loaf inside the preheated oven and bake for 40 minutes or until done.
Step 9: Meanwhile, in a small mixing bowl, add the rest of the olive oil and salt. Stir until well mixed.
Step 10: Brush the loaf with the mixture.
Step 11: Allow the pesto loaf to rest for a few minutes.
Step 12: Serve warm and enjoy!
