Pumpkin Spice Coffee Cake

Everyone should taste this incredible Coffee Cake! Try this recipe now and taste perfection. Enjoy!

Ingredients:

For the streusel:

1/2 c (100 grams) light brown sugar
1/4 c (32 grams) all-purpose flour
1/2 c (60 grams) finely chopped pecans
1 tsp ground cinnamon
3 tbsp (43 grams) unsalted butter, melted

For the cake:

2 c (254 grams) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine salt
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/2 c (100 grams) light brown sugar
1/2 c (100 grams) granulated sugar
1 c (244 grams) pumpkin puree
1/2 c (100 grams) vegetable oil
4 ounces (113 grams) sour cream, at room temperature
2 large eggs, beaten

For the glaze:

1/2 c (63 grams) powdered sugar, sifted
2 tbsp maple syrup

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray in an 8-inch pan.

To Make the Streusel:

Step 1: Add all the ingredients for the streusel in a medium mixing bowl. Stir until well mixed.

To Make the Cake:

Step 1: Add the flour, baking powder, cinnamon, ginger, baking soda, brown sugar, granulated sugar, and salt into a large mixing bowl. Whisk until well combined.

Step 2: In another mixing bowl, add the sour cream, oil, pumpkin puree, and eggs. Stir until well mixed.

Step 3: Create a small well in the middle of the flour mixture and transfer the wet ingredients into it. Stir until well mixed.

Step 4: Transfer 1/2 of the batter into the pan and sprinkle 1/2 of the streusel on top.

Step 5: Add the rest of the batter on top of the streusel and top it with the rest of the streusel.

Step 6: Place inside the preheated oven and bake for 35 minutes or until a toothpick comes out clean after inserting it in the middle.

Step 7: Remove from the oven and allow it to cool at room temperature for about 15 minutes.

To Make the Topping:

Step 1: Add the maple syrup and sugar in a small mixing bowl. Stir until well mixed.

Step 2: Drizzle the mixture on top of the cake and slice it into small cuts.

Step 3: Serve and enjoy!

Note:

Place any leftovers in an airtight container. They can last up to 4 days.
