2 chicken breasts cut into strips
1 tbsp olive oil
1/2 medium yellow onion chopped
1/2 bell pepper chopped
3 cloves of garlic minced
1/2 tsp EACH salt, pepper, & garlic powder
1 c marinara sauce
1/2 c mozzarella or Italian blend cheese
1/4 c Parmesan cheese optional
3 c cooked pasta 1.5 cups dry pasta
Step 1: Place a medium saucepan with salt and 2 cups of water on the stove. Turn the heat to medium and allow the water to boil.
Step 2: Add ½ cup of the uncooked pasta. Cover the pan and cook for about 10 minutes.
Step 3: Meanwhile, slice the chicken breasts, bell peppers, and onion.
Step 4: Place a heavy-duty pan on the stove and turn the heat to medium-high.
Step 5: Add 1 tablespoon of oil and allow it to become hot.
Step 6: Add the bell pepper and onion. Sauté for 1 to 2 minutes or until translucent.
Step 7: Add the minced garlic and sauté for about 30 seconds or until aromatic.
Step 8: Add the chicken strips, garlic powder, salt, and pepper. Cook for a few minutes or until hot.
Step 9: Add marinara sauce and stir until just blended.
Step 10: Cover and allow the mixture to simmer for about 5 minutes.
Step 11: Drain the pasta and transfer it into the pan with the chicken mixture. Toss until well combined.
Step 12: Remove from the heat and sprinkle a generous amount of cheese.
Step 13: Serve and enjoy!
