¼ c of breadcrumbs
¼ tsp salt
¼ tsp pepper
4 thick slices of white bread warm water
6 sheets of ready rolled puff pastry
1 Egg

Step 1: Prepare the oven and preheat to 400 degrees F or 200 degrees C.

Step 2: Allow the puff pastry sheets to thaw at room temperature.

Step 3: Chop the onions and pulse them 2 to 3 times in a food processor.

Step 4: In a medium mixing bowl, add in the onions, sausage mince, breadcrumbs, mixed herbs, salt, and pepper. Stir until well combined.

Step 5: Slice the crusts of the bread and place them in a separate mixing bowl.

Step 6: Pour in enough water just to submerge the bread and let it sit for 5 minutes.

Step 7: Drain the water and slowly squeeze the bread to remove more water.

Step 8: Transfer the bread into the sausage mince mixture and stir until well combined.

Step 9: Drop teaspoons of the mixture on one edge of the pastry sheet.

Step 10: Roll the edge until filled.

Step 11: Cut the edge of the pastry to separate it from the rest of the pastry.

Step 12: Repeat this process until everything is done.

Step 13: Gently flatten the rolls using the back of a knife.

Step 14: Arrange the rolls onto the baking tray and brush egg wash on each roll.

Step 15: Place the rolls inside the preheated oven and bake for 20 minutes.

Step 16: Reduce the heat to about 180 degrees C and bake for another 10 minutes.

Step 17: Remove from the oven and let the rolls cool for at least 5 minutes.

Step 18: Serve and enjoy!
