3 to 4 pounds bone-in chicken parts
2 oranges, sliced
1 lemon, sliced
1 onion, diced
1 c fresh orange juice
1/2 c fresh lemon juice
1/4 c olive oil
4 cloves garlic, minced
1/2 tablespoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
2 to 3 fresh thyme sprigs
2 to 3 fresh rosemary sprigs
Sea salt and freshly ground black pepper
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Add the garlic, olive oil, orange juice, paprika, lemon juice, dried oregano, red pepper flakes, lemon juice, salt, and pepper into a mixing bowl. Stir until well mixed.
Step 3: Prepare a baking dish and put 1/2 of the lemon and orange slices on the bottom.
Step 4: Put the chicken slices over the fruits together with rosemary, thyme, and the rest of the lemon and orange slices.
Step 5: Spread the mixed sauce on top of the chicken.
Step 6: Place the baking dish inside the preheated oven and bake for 1 hour or until done.
Step 7: Remove from the oven and allow it to cool for a few minutes.
Step 8: Serve and enjoy!
